Potatoes Are Love
Ah, today's Stargate: Atlantis-athon on SciFi is a thing of beauty. I'm reminded how much I enjoyed that episode about the two Rodneys.
In other news, my latest cheap-and-easy veg creation:
dab of butter, for frying
3 or 4 small Yukon Gold potatoes, diced, or sliced into rounds about 1/4" thick
1 ripe tomato, diced
sharp cheddar cheese, shredded or cut into small chunks
chunky salsa (I like a nice smoky garlic type)
plain yogurt
flour tortillas
Fry up the potatoes in the butter like breakfast potatoes or cottage fries - low heat, a single layer of potatoes, leave for a few mintues, then turn over to brown the other side. It shouldn't take more than 10 minutes or so to cook the whole batch.
Heat a flour tortilla in a dry frying pan over medium heat, a few seconds on each side; you just want it warmed and soft, not crisped.
Pile a couple of spoonfuls of potatoes on the warmed tortilla. Layer with cheese, tomatoes, salsa, and yogurt. Fold up into a packet, burrito-style. Eat!

BTW, are you a Stargater? We're gonna be a doing a Stargate premiere night tomorrow, and an impromptu viewing party could be arranged. With goulash, of course. : )
